In a sherry Bodega vinegar was seen as a failure, especially if too many of the butts turned. The most recent one was quite specialized and required a good bit of research and diligence on Lucy’s part. Another traditional process called añadas leaves the vinegar to age without moving it. It was an overall wonderful experience. It was such fun eating our way through Porto with them both.
